Throat space (also called harp space) is the open distance between the needle and the body of the machine. When you quilt, the rolled-up quilt has to squeeze through that gap. Too little room and you'll fight the bulk on every line.

What actually matters when you buy
An even feed through thick layers
A quilt sandwich is three layers that want to slide apart. A walking foot (or a built-in even-feed system) keeps them moving together. If your machine doesn't include one, budget for it. It's the single most useful quilting accessory.
A wide extension table
The table supports the quilt's weight so it doesn't drag the fabric off course. Every machine above includes one.
Needle up/down and a start/stop button
Needle-down lets you pivot at corners without the quilt shifting. Start/stop and a speed slider make free-motion quilting far easier to control.
Throat space, if you'll quilt big
See the table above. If you'll mostly piece tops and send the big ones out for long-arm quilting, you don't need to pay for a huge throat.
What you don't need
Hundreds of decorative stitches, embroidery and Wi-Fi. They're nice extras, but none of them make a better quilt.
The small things quilters buy most
